1st Day of Work

Today was my first day of work, I'm so excited to work for this company. Everyone was so nice, they even had a welcome lunch-in they bought all the employees In-N-Out (yum, so good!!. They also bought a welcome cake for me =) That was so nice, I had never heard of companies doing that only for good byes, then again i haven't been with a lot of companies hehe.. 
Isn't so cute? Nicest gesture ever!!


I must admit I am very nervous about being the new Administrative Assistant(AA) of the clinic, because I have never worked at an office let alone a clinic I've always been a waitress. I'll keep everyone posted on how my job goes, I pray that pick up on everything fast and i do well with this company.. HAVE A BLESSED DAY!!

Homemade Pancakes

I'm finally getting around to doing a recipe, I must say as a disclaimer most of the recipes I use are from the internet, recipe books, etc. I can't really cook without recipes lol. Lets get started, shall we....

This is a recipe for pancakes from scratch. Derek and I really enjoy these, they are so moist and delicious, although I must say we tried this mixture for waffles and not very good. For pancakes this mixture is easy, delicious,fluffy and we will never go back to pre-made/boxed pancake mixture.... 


Ingredients: 
1 cup of flour
2 tablespoon of sugar 
2 teaspoon of baking powder 
1/2 teaspoon of salt 
1 cup of milk 
2 tablespoons unsalted butter, melted, or vegetable oil
1 large egg 
1 tablespoon vegetable oil 
This picture shows two eggs but you only need one sorry! 
Directions  
1. Take a small bowl and whisk together flour, sugar, baking powder, and salt; set aside. 
2. In medium bowl, whisk together milk, butter (or oil), and egg.


Add dry ingredients to milk mixture; whisk until just moistened ( some lumps is ok, don't over mix) 


3. Heat large skillet or griddle over medium. Fold a sheet of paper towel in half, and moisten with oil; rub skillet with moisten paper towel.  
4. Spoon 1/4 cup of pancake mix to skillet, two or three should fit in your skillet. 


5. cook until surface of pancakes bubbles and a few have burst. Flip carefully with a spatula, and cook till edges browned. 
6. Enjoy your pancakes with syrup, jelly/ jam, fruits toppings or whatever you enjoy your pancakes with. =) yum

Big News!!

I feel like a horrible blogger I have not been blogging for a while, then I say I have news for the next day and don't come back on till two days later.... sorry!!

Well on with my story, I finally got a job!!!! yay I feel so excited and blessed to finally have found a job. It did take a while but only God nows the right time and moment to grant us what we ask for. I will be an administrative assistant at a clinic, and I'm so very excited and scared. I have not actually started yet, I'm waiting to hear where to take a drug test and get finger printed and as soon as all that clears, I'm good to start. That means Derek and I will actually be able to afford to move out in the near future, that is very pleasing to my little heart =). Like I've said before I love his family they are the nicest people ever, but it really is time to move out and have our own place. 


On another note Iv'e been contemplating in sharing some recipes, now let me warn everyone I by no means am a cook. I actually don't like cooking ask my husband, he actually jokes around saying "I think, I married the wrong Mexican the one that doesn't cook." I just smile and say, "that's why I married you, because you don't mind." I love him! Anyways, that's why I want to share some of the foods I make at home for those newly weds that have no clue how to cook at all like I was. Thats to come soon...

It's our Anniversary

My, my, time flies when you are happy! Yesterday April 12, 2012 was Derek's and my 2 year wedding Anniversary. I'm truly happy and feel blessed to be married to such a wonderful individual that loves, cares, and respects me. Just knowing that the feeling is mutual makes me, oh so happy. I can remember when we first met, when he first asked me to be his girlfriend, the first I love you from Derek, his proposal, to our I do's. I sigh at the thought of our moments together, how in the four years I've known him we have grown not only as individuals but as a couple. 


Since it was our anniversary it was a day of celebration =). Originally we were suppose to go kayaking in San Diego, but because of laziness from both our parts we never made reservations( but it worked out because the day was cloudy and it was suppose to rain), we will for sure do it next month when the weather is more appropriate. We decided to go to Medieval Times in Buena Park and had blast. We got the celebration Packet, our anniversary was announced, we got our picture taken, we got cake, and some other goodies. Indeed it was so much fun, unfortunately our Green Knight didn't win that night but he was the runner up. 


Oh and I almost forgot to tell you guys, my wonderful husband got me a beautiful purple Orchid Plant. My very own first plant, we are planing to finally move out in the near future so he said it was time for me to commit to keeping something a live lol. I'm so happy to have received it lets just hope and pray it does not die on me.

Some Day I'll Learn

My Family and close friends know that last summer I spent it in Mexico July-November and trust me it was not for fun, so in the mist of it all I decided to make the most out of it. Now I have an iphone so naturally I also have internet but I could not use in Mexico because of roaming and the high bill that would come with it. That is until I discovered that if i placed my phone on the headboard at just the right angle i would get my at&t service and not the telcel (mexican service) that means no roaming charges yay!!.. With that discovery I was attached to my phone all day, watching movies, and TV shows on Netflix. Of course with a big neck pain from trying to get the right angle with service but I did not care lol. One of the shows that I fell in love with was Switched at birth. 


I love that they use ASL (American Sign Language) on the show it just looks like such a beautiful language, that is definitely one that I would love to learn. As I was on youtube world today I saw that Sean Berdy, Emit on the show translated "Hero" by Enrique Iglesias into ASL it's beautiful check it out. =)




What did you guys think? Cute huh. I know my name and a word here and there but not really. I have a little brother with down syndrome and while his hearing is fine, he refuses to talk. A few years ago his language therapy teachers started teaching him some sign language so that's how I know a word or two.. Some day I will take a class that's on my life to do list haha

Last Two Weeks of My Life

1.) I could not say enough of how blessed I am to have such a wonderful big family. People often look at me weird when they find out I have 6 brothers and sisters but honestly I think it's fun and cool we don't need to invite people to have a get together or anything because we are enough with just us (not that we don't). Last weekend, my older siblings, Derek, and I went bowling it was so much fun getting together with them. I hate to admit it, but since I got married I don't see them as often anymore, plus we all have different schedules because of work, and school. 




Sometimes It's hard to believe how the years go by, we were all little kids one day and its seems that in a blink of an eye we're all teenagers and young adults.





At first I was doing well bowling but as the game progressed it was apparent I suck at bowling. =( Sad but true, next time I'll come around lol. 



2.) Valentines day was great I have the most amazing husband any one can have, no no I'm not just saying that who else would give me these amazing tulips? 


That's right two bouquets, I feel special =)

He also gave me a curling iron that I had been wanting since hmmm? Heck since I got married lol, the one I had at my mom's stayed at my mom's with her and my sister. That day we didn't do much since it was a tuesday and Derek had to work early the next day, so we opted to stay home and watch movies.



3.) That week we also hopped on our beach cruiser and rode them for 3.8 miles down to the movies. We watched The Vow, amazing movie, needless to say I loved it. What shocked me more was to find out that it was based on a true story, so sad.  I would totally hate what happened to them to happen to Derek and I. 



After the movies we hopped on our bikes again and went to eat at a place called "Just Hotdogs," We had been meaning to try this place but for one reason or another we hadn't. Well let me just say one word DELICIOUS!! I must say that day was one of my favorite dates we have had in a long time so simple yet so nice to ride our bikes and get out. Have I said this already? I freaken LOVE my HUSBAND..! 





4.) On Presidents day I had a great day, my family had a BBQ in a near by park, and it was fun all of us getting together. We had some bomb carne asada, godornis (cornish game hen), salad, rice, chorizo beans, fruit salad, and yummy agua de jamaica (jamaica water) and yucky agua de tamarindo (tamarin water).. Needless to say Derek and I got home so bloated and full with all that food.

 Everyone always says that she looks exactly like me, Derek always jokes that one day I'm going to come out and tell him that she is my daughter. lol what do you guys think, does she look like me? 
 It was quite windy, hence why we are all covered up. 

 I love all these people, they are the center of my world and would do anything for them!

 The best sisters in the whole wide world !!!
We couldn't leave out the family dog Cookie, she is such a good dog. She just kept wanting to snuggle with me.

It's the little things that count

Sometimes it amazes me how such a little gesture can go a long way. An old long time friend texted me this picture:


Now tell me that is not the cutest? She is a pre-school teacher, and as an assignment she had her students draw a picture of a friend and themselves. Thus, of course she needed to show an example.

I have to say, this made my day, and put a smile in my face =) Thank you Mrs. Daisy!  
Sometimes in the busy world we live in it’s hard to forget that It’s the Little Things that Count. It’s the smile, the word of encouragement, an act of kindness, a listener, a hug, a kiss or just a drawing (like the one I received) that can really make someones day, and turn a frown upside down. Lets’s not forget to do an act of kindness, not only will it make us feel all warm and fuzzy inside but we could make someones day...

Quarter Life Crisis?



Hmm.. I can't seem to think of another way of describing what is going on in my life right now, Quarter life crisis  sounds about right.. Here I am with a Sociology degree thinking to myself "What was I thinking majoring in such a useless degree?" But I loved my major. It's so interesting knowing how society behaves, and why people do the things they do because of how others influence them...


 So now what??? I'm out of school, the only experience I have had is waitressing at a local BBQ restaurant for the past 7 years, and I'm stuck. Should I go back to get my M.A.? But what if I'm stuck with another "useless degree?" Should I take another low paying job? I do need money, I do have bills... Wow, I never thought life would bring me to such a doubtful state of mind. Me? The confident, self-sufficient, responsible, miss know-it-all? Now I don't seem to know who I am, what I want as a career, or what life has in store for me. =( better days will come, I must believe!!!!

A New year, A New Beginning, and A New Blog =)


Hi everyone, first off Happy New Year !!! My name is Laura Velez, I live in lovely sunny California. I am married to my best friend and soulmate Derek, which you will hear a lot about. We had two turtles Pete and Kate, and I say had because right before Christmas we had to donate them to a petting zoo place for we could not afford Kate's medical bills (she was very sick), but we wanted to keep them together so decided to give them both away. Not only that but we live in a tiny little room in my husbands grandparents house and we just did not have room for them. Hopefully some day we can get more, or a little puppy would be nice. 

I have been contemplating starting a personal blog for the past year or so, but because of fear and tons of other excuses I can give, I never did. But as the new year has started I believe it is the perfect start to this new Journey. I think Fear is a poor excuse anyways, but I am human and everyone will at one point or another experience it. Here I want to share a little bit about my life, thoughts etc…. If you would like to know a little more please check the About Me section. =)
